Ingredients:
For the Meatloaf:
- 1.5 pounds ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped bell pepper (any color)
- 2 cloves garlic, minced
- 2 eggs
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1 boiled egg (peeled)
For the Vegetable Bed:
- 1 cup baby carrots
- 1 cup green beans, trimmed
- Olive oil
- Salt and pepper to taste
For Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, chopped onion, chopped celery, chopped bell pepper, minced garlic, eggs, Worcestershire sauce, salt, and pepper.
- Mix the ingredients until well combined.
3. Form the Meatloaf:
- Take half of the meat mixture and press it into the bottom of a loaf pan, creating a well in the center.
- Place the boiled egg into the well.
4. Finish Assembling the Meatloaf:
- Cover the egg with the remaining meat mixture, making sure to seal the edges to encase the egg completely.
5. Prepare the Vegetables:
- Toss the baby carrots and green beans with olive oil, salt, and pepper.
- Place the seasoned vegetables around the meatloaf in the loaf pan.
6. Make the Glaze:
- In a small bowl, mix together ketchup, brown sugar, and Dijon mustard.
7. Glaze and Bake:
- Brush the glaze over the top of the meatloaf.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (71°C).
8. Rest and Serve:
- Allow the meatloaf to rest for a few minutes before slicing.
- Serve slices of meatloaf with the boiled egg in the center and surrounded by the roasted baby carrots and green beans.
