Meatloaf


 


Ingredients:

For the Meatloaf:

  • 1.5 pounds ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 2 eggs
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 1 boiled egg (peeled)

For the Vegetable Bed:

  • 1 cup baby carrots
  • 1 cup green beans, trimmed
  • Olive oil
  • Salt and pepper to taste

For Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare the Meatloaf Mixture:

  • In a large mixing bowl, combine ground beef, breadcrumbs, milk, chopped onion, chopped celery, chopped bell pepper, minced garlic, eggs, Worcestershire sauce, salt, and pepper.
  • Mix the ingredients until well combined.

3. Form the Meatloaf:

  • Take half of the meat mixture and press it into the bottom of a loaf pan, creating a well in the center.
  • Place the boiled egg into the well.

4. Finish Assembling the Meatloaf:

  • Cover the egg with the remaining meat mixture, making sure to seal the edges to encase the egg completely.

5. Prepare the Vegetables:

  • Toss the baby carrots and green beans with olive oil, salt, and pepper.
  • Place the seasoned vegetables around the meatloaf in the loaf pan.

6. Make the Glaze:

  • In a small bowl, mix together ketchup, brown sugar, and Dijon mustard.

7. Glaze and Bake:

  • Brush the glaze over the top of the meatloaf.
  • Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (71°C).

8. Rest and Serve:

  • Allow the meatloaf to rest for a few minutes before slicing.
  • Serve slices of meatloaf with the boiled egg in the center and surrounded by the roasted baby carrots and green beans.
